  • 4 ounces cream cheese, softened (full-fat preferred)
  • 2 tablespoons mayonnaise
  • 1 teaspoon Dijon mustard
  • 2 teaspoons everything bagel seasoning, plus extra for garnish
  • 1 tablespoon fresh chives, finely chopped (optional garnish)
  • 1 teaspoon lemon juice
  • Salt and black pepper to taste

Instructions

  1. Place 12 large eggs in a single layer in a large pot. Cover with cold water about an inch above the eggs. Bring to a rolling boil over medium-high heat (about 10 minutes). Once boiling, turn off the heat, cover the pot, and let sit for 10-12 minutes.
  2. Drain the hot water and transfer eggs to an ice bath or run under cold water until fully cooled (about 5 minutes). Peel carefully and pat dry.
  3. Using a sharp knife, cut each egg in half lengthwise. Gently remove the yolks and place them in a mixing bowl. Arrange egg whites on a serving platter.
  4. Mash the yolks with a fork until crumbly. Add 4 ounces of softened cream cheese, 2 tablespoons mayonnaise, 1 teaspoon Dijon mustard, 1 teaspoon lemon juice, and 2 teaspoons everything bagel seasoning. Mix thoroughly until smooth and creamy. Season with salt and pepper to taste.
  5. Transfer the filling to a piping bag or use a spoon to dollop the mixture into each egg white half.
  6. Sprinkle extra everything bagel seasoning and chopped fresh chives over the top for color and crunch. Cover and refrigerate for at least 30 minutes to let flavors meld.
  7. Serve chilled or at room temperature. Best enjoyed within 24 hours but can be stored up to 2 days in an airtight container.

Notes

Use full-fat cream cheese for best texture and flavor. If filling is too thick, add more mayo or a splash of milk. For easier peeling, cool eggs in ice bath immediately after boiling. Piping bag or zip-top bag with corner snipped gives a prettier presentation. Can substitute cream cheese with plant-based alternatives for dairy-free version.
