Creamy Mashed Potato Sundae Recipe with Savory Bacon Chive Topping

  • 2 pounds Yukon Gold potatoes, peeled and quartered
  • 4 tablespoons unsalted butter, softened
  • 1/2 cup whole milk, warmed
  • 1/4 cup sour cream (optional)
  • Salt and freshly ground black pepper, to taste
  • 6 slices thick-cut bacon, chopped
  • 2 tablespoons fresh chives, finely chopped
  • Optional: shredded sharp cheddar cheese

Instructions

  1. Place peeled and quartered Yukon Gold potatoes in a large pot and cover with cold water by about an inch. Add a pinch of salt. Bring to a boil over high heat, then reduce to medium and simmer until potatoes are fork-tender, about 15-20 minutes.
  2. While potatoes cook, heat a skillet over medium heat. Add chopped bacon and cook, stirring occasionally, until crispy and golden brown, about 7-10 minutes. Transfer bacon to a paper towel-lined plate to drain excess fat.
  3. Once potatoes are tender, drain them well in a colander. Return them to the hot pot (off the heat) for a minute or two to allow excess moisture to evaporate.
  4. Using a potato masher or ricer, mash the potatoes until smooth but not gluey.
  5. Stir in softened butter until melted and incorporated. Slowly add warm milk, stirring gently. Fold in sour cream if using. Season with salt and freshly ground black pepper to taste.
  6. Spoon or pipe mashed potatoes into serving glasses or bowls, creating a “sundae” shape with little peaks. Sprinkle the crispy bacon pieces generously on top, followed by a scattering of fresh chives. Add cheddar cheese if desired.
  7. Serve immediately while warm.

Notes

If mash feels too stiff, add extra warm milk a tablespoon at a time until desired consistency is reached. Warm milk before adding to keep mash creamy. Save a little bacon fat to drizzle on top for extra flavor. Avoid overworking potatoes to prevent gummy texture. Cook bacon slowly over medium heat for best crispiness. Serve immediately for best texture; leftovers should be stored separately and reheated gently.
