Instructions

  1. Macerate the peaches by tossing diced peaches with granulated sugar, lemon juice, and half the cinnamon in a bowl. Let sit for 10 minutes.
  2. Make the crumble topping: Preheat oven to 350°F (175°C). Mix flour, brown sugar, remaining cinnamon, and melted butter until crumbly. Spread on a baking sheet and bake for 12-15 minutes, stirring halfway through. Let cool completely on a wire rack.
  3. Whip the cold heavy cream in a chilled bowl until soft peaks form, about 5 minutes.
  4. Gently fold sweetened condensed milk and vanilla extract into the whipped cream to keep the mixture light and airy.
  5. Drain excess liquid from peaches. Fold peaches and about two-thirds of the crumble topping into the creamy base, reserving some crumble for layering.
  6. In a freezer-safe container, layer half the ice cream mixture, sprinkle with reserved crumble, then add the remaining ice cream mixture. Finish with a final sprinkle of crumble and press gently to even out.
  7. Cover tightly and freeze for at least 6 hours or overnight until firm. Let sit at room temperature for 5-10 minutes before serving.
