  • 1 lb Italian sausage (mild, sweet, or spicy)
  • 1 medium onion, finely diced
  • 2 cloves garlic, minced
  • 2 medium carrots, peeled and diced
  • 2 stalks celery, chopped
  • 1 cup ditalini pasta
  • 4 cups chicken broth (low-sodium)
  • 1 cup heavy cream
  • 1 cup grated Parmesan cheese
  • Salt and pepper to taste
  • 2 tbsp fresh parsley, chopped

Instructions

  1. Cook the Italian sausage in a large pot over medium heat until browned and fully cooked. Break it into crumbles as it cooks. Remove the sausage and set aside.
  2. Add diced onion, carrots, and celery to the same pot. Cook for 5-7 minutes, stirring occasionally, until softened. Add minced garlic and cook for another 30 seconds until fragrant.
  3. Pour in the chicken broth and bring the mixture to a gentle boil.
  4. Stir in the ditalini pasta and cook for 8-10 minutes, or until al dente. Reduce heat to a simmer.
  5. Stir in the heavy cream and grated Parmesan cheese. Let the soup simmer for 5 minutes to meld the flavors.
  6. Add salt and pepper to taste. Stir in the cooked sausage and let everything heat through.
  7. Ladle the soup into bowls, garnish with fresh parsley, and serve warm.
