Creamy Ranch Chicken with Garlic Mashed Potatoes

A comforting and flavorful meal featuring ranch-seasoned chicken in creamy sauce paired with buttery garlic mashed potatoes. Perfect for weeknight dinners or hosting guests.

  • 11.5 lbs boneless, skinless chicken breasts
  • 1 packet ranch seasoning or homemade mix
  • 1 cup low-sodium chicken broth
  • 1 cup heavy cream
  • 4 oz cream cheese, softened
  • 4 tbsp unsalted butter, divided
  • 4 cloves garlic, minced
  • 2 lbs russet or Yukon Gold potatoes, peeled and chopped
  • 1/2 cup whole milk or dairy-free alternative
  • Salt and pepper to taste

Instructions

  1. Mince the garlic, peel and chop the potatoes into uniform chunks, and soften the cream cheese. Pat the chicken breasts dry and season them with salt, pepper, and half of the ranch seasoning.
  2. Heat 2 tablespoons of butter in a large skillet over medium heat. Add the chicken breasts and cook for 4-5 minutes on each side, or until golden brown. Remove the chicken and set aside.
  3. In the same skillet, add the remaining butter and minced garlic. Sauté for 1-2 minutes until fragrant. Whisk in the chicken broth and heavy cream, then add the softened cream cheese and remaining ranch seasoning. Stir until the sauce is smooth and thickened, about 5 minutes.
  4. Return the chicken to the skillet, spoon the sauce over the top, and simmer on low heat for 10-12 minutes or until the chicken is cooked through (internal temperature of 165°F / 74°C).
  5. While the chicken is cooking, boil the potatoes in a medium-sized pot with salted water until fork-tender (about 15 minutes). Drain and return them to the pot.
  6. Add the milk, butter, and minced garlic to the pot with the potatoes. Mash until creamy and smooth, adjusting seasoning with salt and pepper to taste.
  7. Plate the chicken alongside the garlic mashed potatoes, spooning extra ranch sauce on top for the ultimate comfort meal.
