  • 1 lb Italian sausage (mild, spicy, or sweet, casing removed)
  • 2 tbsp olive oil
  • 1 yellow onion, diced finely
  • 3 cloves garlic, minced
  • 6 cups chicken broth
  • 1 cup heavy cream
  • 12 oz cheese tortellini (fresh or frozen)
  • 2 cups fresh spinach
  • 1 tsp Italian seasoning
  • Salt and pepper to taste

Instructions

  1. Heat 1 tablespoon of olive oil in a large soup pot over medium heat. Add the sausage and cook, breaking it up with a wooden spoon, until browned and cooked through (about 6-8 minutes). Remove the sausage and set aside.
  2. In the same pot, add another tablespoon of olive oil if needed. Sauté the diced onion for 3-4 minutes until softened. Add the garlic and cook for 1 minute, until fragrant.
  3. Pour in the chicken broth and stir in the Italian seasoning. Bring the mixture to a gentle simmer.
  4. Add the tortellini to the pot and cook according to package instructions (usually 4-5 minutes for fresh tortellini or 8-10 minutes for frozen). Stir occasionally to prevent sticking.
  5. Lower the heat to medium-low and slowly stir in the heavy cream. Allow the soup to simmer gently for 3-4 minutes.
  6. Stir in the fresh spinach and cooked sausage. Let the spinach wilt for about 2 minutes. Taste and adjust the seasoning with salt and pepper.
  7. Ladle the soup into bowls, garnish if desired, and serve hot.

Notes

Take your time browning the sausage for rich flavor. Use fresh tortellini for better texture, but frozen works well too. Keep the heat low when adding cream to prevent curdling.
