  • 1 cup (240 ml) heavy cream
  • 1/2 cup (120 ml) chicken broth (low sodium recommended)
  • 3 cloves garlic, minced fresh
  • 1/2 cup (50 grams) grated Parmesan cheese
  • 1 teaspoon Italian seasoning
  • 1/4 teaspoon red pepper flakes (optional)
  • Salt and pepper to taste
  • 1 tablespoon olive oil (optional, for sautéing garlic and tomatoes)

Instructions

  1. Pat dry 4 boneless, skinless chicken breasts with paper towels. Season both sides generously with salt and pepper.
  2. Optional: In a skillet, heat 1 tablespoon olive oil over medium heat. Add 3 minced garlic cloves and 1/2 cup chopped sun-dried tomatoes. Cook for 2–3 minutes until fragrant and slightly caramelized.
  3. In a mixing bowl, combine 1 cup heavy cream, 1/2 cup chicken broth, 1 teaspoon Italian seasoning, 1/2 cup grated Parmesan cheese, and 1/4 teaspoon red pepper flakes (if using). Stir well until combined.
  4. Place the seasoned chicken breasts at the bottom of the slow cooker. Pour the cream sauce mixture evenly over the chicken. If sautéed, add garlic and sun-dried tomatoes on top.
  5. Cover and cook on LOW for 4 to 5 hours or on HIGH for 2 to 3 hours until chicken is tender and reaches an internal temperature of 165°F (74°C). Avoid lifting the lid frequently.
  6. About 10 minutes before serving, gently stir the sauce to blend everything. If the sauce is too thin, remove the chicken and simmer the sauce on the stovetop to reduce and thicken.
  7. Serve the chicken and sauce over pasta, rice, or mashed potatoes. Garnish with fresh basil or parsley if desired.

Notes

Use oil-packed sun-dried tomatoes for richer flavor; rehydrate dry-packed if needed. Fresh garlic is preferred over garlic powder. Avoid overcooking chicken to prevent dryness. Stir sauce gently before serving. For dairy-free, substitute coconut cream and dairy-free Parmesan alternatives. If sauce is too thick after cooking, add a splash of broth or cream to loosen. Chicken thighs can be used with longer cooking time (5-6 hours on LOW).
