  • 2 cups fresh baby spinach
  • 1 cup heavy cream (240 ml)
  • 1/2 cup chicken broth (120 ml), homemade or low sodium
  • 1/3 cup freshly grated Parmesan cheese
  • 1 teaspoon dried Italian herbs (basil, oregano, thyme mix)
  • Salt and freshly ground black pepper to taste
  • 1/4 teaspoon red pepper flakes (optional)

Instructions

  1. Pat dry the chicken breasts with paper towels to remove excess moisture. Season both sides with salt, pepper, and dried Italian herbs. (About 5 minutes)
  2. Heat 2 tablespoons olive oil in a large skillet over medium-high heat. Add chicken breasts and sear for 5-6 minutes per side until golden brown and cooked through (internal temperature 165°F / 74°C). Remove chicken and set aside. (10-12 minutes)
  3. Lower heat to medium. In the same skillet, add minced garlic and chopped sun-dried tomatoes. Stir frequently for 1-2 minutes until fragrant, being careful not to burn the garlic. (2 minutes)
  4. Pour in chicken broth to deglaze the pan, scraping up browned bits. Let simmer for 2 minutes to reduce slightly. (2 minutes)
  5. Stir in heavy cream and grated Parmesan cheese. Continue stirring gently until cheese melts and sauce thickens slightly, about 3-4 minutes. The sauce should coat the back of a spoon. (4-5 minutes)
  6. Add fresh spinach leaves to the sauce and stir until wilted, about 2 minutes. (2 minutes)
  7. Return cooked chicken breasts to the pan, nestling them into the creamy sauce. Warm together for 2-3 minutes so chicken absorbs sauce flavor. Adjust seasoning with salt, pepper, and optional red pepper flakes. (2-3 minutes)
  8. Serve chicken with sauce spooned over the top. Garnish with extra grated Parmesan or fresh basil if desired.

Pat chicken dry before cooking to ensure a good sear. Use extra virgin olive oil for better flavor. Avoid overcrowding the pan to prevent steaming.
