  • ½ cup (60 g) chopped unsalted pistachios
  • 8 oz (227 g) whipped topping, thawed (Cool Whip or homemade whipped cream)

Instructions

  1. Drain the pineapple thoroughly to remove excess juice and set aside.
  2. In a mixing bowl, whisk the instant pistachio pudding mix with 2 cups cold milk for about 2 minutes until it thickens.
  3. Gently fold in the 8 oz thawed whipped topping using a spatula to keep the mixture light and airy.
  4. Stir in the drained crushed pineapple and mini marshmallows just enough to combine evenly.
  5. Fold in the chopped pistachios, reserving a small handful for garnish.
  6. Cover the bowl with plastic wrap and refrigerate for at least 1 hour to allow flavors to meld and marshmallows to soften.
  7. Before serving, gently stir the salad and sprinkle reserved pistachios on top.
