A silky, tangy whipped feta dip blended with cream cheese, honey, and roasted cherry tomatoes, perfect for parties and easy to prepare in about 15 minutes.

Ingredients

Scale
  • 8 ounces crumbled feta cheese (preferably block feta)
  • 4 ounces softened cream cheese
  • 2 tablespoons honey
  • 12 ounces cherry tomatoes, halved
  • 3 tablespoons extra virgin olive oil (1 tbsp for roasting, 2 tbsp for folding into dip)
  • 3 garlic cloves, unpeeled
  • 1 teaspoon fresh thyme leaves (optional)
  • 1 tablespoon fresh lemon juice
  • Freshly ground black pepper, to taste
  • Sea salt, to taste

Instructions

  1. Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper or a silicone mat.
  2. Halve the cherry tomatoes and place them on the baking sheet. Add the unpeeled garlic cloves and drizzle with 1 tablespoon of olive oil. Sprinkle thyme leaves over the tomatoes and toss gently to coat evenly.
  3. Roast in the oven for 20-25 minutes until tomatoes are soft, caramelized, and garlic is fragrant and golden. Remove and let cool slightly.
  4. Peel the roasted garlic cloves by squeezing them out of their skins into a small bowl.
  5. In a food processor, combine crumbled feta, softened cream cheese, honey, lemon juice, remaining 2 tablespoons olive oil, and roasted garlic. Pulse until smooth and creamy, about 1-2 minutes, scraping down sides as needed. The texture should be light and fluffy.
  6. Season with freshly ground black pepper and salt if necessary.
  7. Gently fold the roasted cherry tomatoes into the whipped feta with a spatula, keeping some tomato juices for moisture but avoiding crushing the tomatoes.
  8. Serve immediately or refrigerate for 30 minutes to let flavors meld. Before serving, drizzle extra honey and olive oil on top and garnish with fresh thyme or cracked black pepper if desired.

Notes

Use block feta for creamier texture. Soften cream cheese before blending. Roast garlic unpeeled for mellow flavor. Pulse gently to avoid grainy texture. Adjust salt carefully due to feta’s saltiness. Can be made a day ahead and stored in fridge. Stir in a teaspoon of water or olive oil if dip is too thick after chilling.
