Ingredients

Scale
  • 1 pound (450g) medium shrimp, peeled and deveined
  • 1/2 cup (60g) all-purpose flour
  • 1/2 cup (50g) panko breadcrumbs
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 large egg, beaten
  • 1/3 cup (80ml) mayonnaise
  • 2 tablespoons sweet chili sauce
  • 1 tablespoon sriracha
  • 1 teaspoon honey
  • 1 teaspoon rice vinegar
  • 1/2 teaspoon garlic powder
  • Optional garnishes: chopped green onions, sesame seeds, lime wedges

Instructions

  1. Pat the shrimp dry with paper towels to ensure the coating sticks well.
  2. In a medium bowl, combine the all-purpose flour, panko breadcrumbs, smoked paprika, garlic powder, salt, and black pepper. Mix thoroughly.
  3. In a separate bowl, whisk the large egg until smooth and uniform.
  4. Dip each shrimp first into the flour mixture, then into the beaten egg, and back into the flour mixture. Place the coated shrimp on a baking sheet or plate without crowding.
  5. Preheat the air fryer to 400°F (200°C) for about 3 minutes.
  6. Arrange shrimp in a single layer in the air fryer basket. Cook for 8-10 minutes, flipping halfway through (around 4-5 minutes) until golden brown and crispy. Cook in batches if needed.
  7. While the shrimp cooks, whisk together mayonnaise, sweet chili sauce, sriracha, honey, rice vinegar, and garlic powder in a small bowl. Adjust heat or sweetness to taste.
  8. Transfer cooked shrimp to a mixing bowl and drizzle the spicy creamy sauce over. Toss gently to coat evenly.
  9. Garnish with chopped green onions, sesame seeds, and lime wedges if desired.

Notes

Pat shrimp dry thoroughly for best crunch. Double coat shrimp with flour mixture and egg for thicker crust. Flip shrimp halfway through air frying for even crispiness. Spray lightly with cooking spray before air frying for extra crispiness. Avoid overcooking to prevent rubbery texture. Sauce can be served on the side to keep shrimp extra crispy longer. Leftovers store well in fridge up to 2 days; reheat in air fryer at 350°F for 3-4 minutes.
