A quick and easy recipe for crispy skin boneless chicken thighs cooked in the air fryer and topped with a rich garlic herb butter, perfect for fuss-free, flavorful dinners.

Ingredients

Scale
  • 4 boneless, skin-on chicken thighs (about 1.5 pounds / 680g)
  • Salt and freshly cracked black pepper, to taste
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • 1 tablespoon olive oil
  • 4 tablespoons (about 60g) unsalted butter, softened
  • 3 cloves fresh garlic, minced
  • 1 tablespoon finely chopped fresh parsley
  • 1 tablespoon finely chopped fresh thyme (or rosemary)
  • 1 teaspoon lemon juice

Instructions

  1. Pat the chicken thighs dry with paper towels to ensure crispy skin.
  2. Season both sides generously with salt, pepper, garlic powder, and paprika. Let rest for 5-10 minutes at room temperature.
  3. In a small bowl or saucepan, combine softened butter, minced garlic, chopped parsley, thyme, and lemon juice. Stir well and keep warm.
  4. Preheat the air fryer to 400°F (200°C) for 3-5 minutes.
  5. Lightly brush the chicken thighs with olive oil on both sides.
  6. Place the thighs skin-side down in a single layer in the air fryer basket. Cook for 10 minutes at 400°F (200°C).
  7. Flip the chicken thighs skin-side up and cook for another 8-10 minutes until internal temperature reaches 165°F (74°C) and skin is golden and crispy. Cook an additional 2-3 minutes at 425°F (218°C) if extra crispiness is desired.
  8. Remove chicken and let rest for 5 minutes.
  9. Generously spoon or brush the garlic herb butter over each thigh while still warm.
  10. Serve immediately with your favorite sides such as cucumber dill salad or grilled corn on the cob.

Notes

Patting the chicken dry before seasoning is crucial for crispy skin. Avoid overcrowding the air fryer basket to ensure even cooking and crispiness. Garlic herb butter can be prepared ahead and warmed before serving. For extra crispiness, increase air fryer temperature to 425°F for the last 2-3 minutes but watch closely to avoid burning. Leftovers reheat best in the air fryer at 350°F for 5-7 minutes to restore crispiness.
