Ingredients

Scale
  • 1 cup water (240 ml)
  • 2 ½ tablespoons unsalted butter
  • 2 tablespoons granulated sugar
  • ½ teaspoon salt
  • 1 cup all-purpose flour (125 g), sifted
  • 2 large eggs, room temperature
  • 1 teaspoon pure vanilla extract
  • Vegetable oil spray (for air fryer basket)
  • ½ cup granulated sugar (for cinnamon sugar coating)
  • 1 tablespoon ground cinnamon
  • ½ cup heavy cream (120 ml) (or coconut cream for dairy-free option)
  • 4 oz bittersweet or semisweet chocolate, chopped (113 g)
  • 1 tablespoon unsalted butter
  • 1 teaspoon vanilla extract
  • Pinch of salt

Instructions

  1. In a medium saucepan, combine 1 cup water, 2 ½ tablespoons unsalted butter, 2 tablespoons sugar, and ½ teaspoon salt. Heat over medium until butter melts and mixture comes to a gentle boil. Remove from heat immediately.
  2. Quickly stir in 1 cup sifted all-purpose flour until the mixture forms a ball and pulls away from the sides of the pan. Do not overmix or undermix; dough should be smooth but thick.
  3. Let the dough cool for about 5 minutes until warm but not hot to touch.
  4. Transfer dough to a mixing bowl. Add 2 large eggs one at a time, beating well after each addition. Stir in 1 teaspoon vanilla extract. Dough should be shiny and smooth, dropping slowly from the spoon.
  5. Preheat air fryer to 375°F (190°C).
  6. Fill a piping bag fitted with a large star tip with the dough. Pipe 4-inch lengths onto parchment paper or silicone mat.
  7. Mix ½ cup sugar with 1 tablespoon cinnamon in a shallow bowl.
  8. Spray air fryer basket with oil. Using kitchen tongs, transfer 3-4 churros into basket without overcrowding. Cook at 375°F (190°C) for 12-15 minutes, flipping halfway, until golden and crisp.
  9. Remove churros and immediately roll in cinnamon sugar mixture. Repeat with remaining dough.
  10. In a small saucepan, heat ½ cup heavy cream over medium heat until just simmering. Remove from heat and stir in chopped chocolate, 1 tablespoon butter, 1 teaspoon vanilla extract, and a pinch of salt until smooth and glossy.
  11. Serve churros warm with chocolate sauce for dipping.

Notes

If dough is too stiff after adding eggs, add a teaspoon of water at a time until it loosens. Watch the air fryer carefully as models vary. Spray air fryer basket lightly with oil to prevent sticking. For gluten-free, substitute flour with gluten-free blend. For vegan, replace eggs with flax eggs and butter with coconut oil; use coconut cream for chocolate sauce. Chocolate sauce can be made ahead and gently reheated. Reheat churros in air fryer for 3-4 minutes at 350°F to restore crispness.
