These crispy air fryer egg rolls are a quick, easy, and crowd-pleasing snack perfect for graduation parties or any gathering. They feature a savory filling with a golden, crackly exterior achieved without deep frying.

  • 1/2 pound ground chicken or pork
  • 1 cup shredded cabbage (about 70 g)
  • 1/2 cup grated carrots (about 60 g)
  • 2 tablespoons chopped green onions
  • 2 cloves minced garlic
  • 1 teaspoon grated fresh ginger
  • 2 tablespoons soy sauce (low sodium preferred)
  • 1 teaspoon sesame oil (optional)
  • Salt and pepper to taste
  • Cooking spray for air fryer basket

Instructions

  1. Prepare the filling: In a medium bowl, combine ground chicken or pork with shredded cabbage, grated carrots, chopped green onions, minced garlic, and grated ginger. Add soy sauce, sesame oil, salt, and pepper. Mix well until evenly combined; filling should be moist but not watery.
  2. Set up your wrapping station: Lay out egg roll wrappers on a clean surface, keeping them covered with a damp towel to prevent drying out. Beat one egg in a small bowl to create an egg wash.
  3. Fill and roll: Place about 2 tablespoons of filling near the bottom corner of each wrapper. Fold the corner over the filling, fold in the sides snugly, and roll tightly toward the top corner. Brush the edge with egg wash to seal completely. Avoid overfilling.
  4. Preheat the air fryer to 375°F (190°C) and lightly spray the basket with cooking spray.
  5. Air fry the egg rolls: Arrange egg rolls in a single layer in the basket with space between each. Spray tops lightly with cooking spray. Cook for 5-6 minutes, flip, spray again, and cook for another 5-6 minutes until golden and crispy. Adjust time as needed based on your air fryer.
  6. Cool and serve: Let egg rolls rest for 2 minutes before serving to help the filling set.

Notes

Do not overfill the egg rolls to prevent bursting. Keep wrappers covered with a damp towel to avoid drying out. Use egg wash generously to seal edges. Spray oil lightly before and midway through cooking for even crispiness. Flip halfway through cooking. For vegan version, use tofu or tempeh and substitute egg wash with cornstarch and water mixture.
