  • 1 tsp salt (plus extra for sprinkling)
  • 1/2 tsp ground black pepper
  • 1/2 tsp smoked paprika (optional)
  • Cooking spray (olive oil or avocado oil)
  • For the Buttermilk Ranch Dip:
  • 1/2 cup buttermilk
  • 1/2 cup mayonnaise
  • 1/4 cup sour cream or plain Greek yogurt
  • 1 tbsp fresh chives, chopped (or 1 tsp dried)
  • 1 tbsp fresh dill, chopped (or 1 tsp dried)
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1/2 tsp salt
  • 1/4 tsp ground black pepper
  • Juice of 1/2 lemon (about 1 tbsp)

Instructions

  1. Peel and slice onions into 1/2-inch rings. Separate rings and keep the largest for frying.
  2. Add onion rings to a large bowl and pour over 1 cup buttermilk. Let soak for at least 15 minutes.
  3. While onions soak, whisk together all ranch dip ingredients in a small bowl. Chill until serving.
  4. Set up three shallow bowls: one with flour mixed with 1/2 tsp salt and 1/2 tsp pepper; one with beaten eggs; one with panko, fine breadcrumbs, and smoked paprika.
  5. Remove a ring from buttermilk, dredge in flour, shake off excess, dip in egg, then coat evenly in breadcrumb mixture.
  6. Place breaded rings on a wire rack. Repeat until all rings are coated.
  7. Preheat air fryer to 375°F for about 3 minutes.
  8. Arrange rings in a single layer in the air fryer basket, leaving space between each. Spray lightly with cooking spray.
  9. Air fry for 8-10 minutes, flipping halfway, until golden and crispy. Add time if needed.
  10. Transfer cooked onion rings to a wire rack. Sprinkle with a little salt while hot.
  11. Serve immediately with chilled buttermilk ranch dip.
