A quick and easy tart featuring flaky puff pastry, whipped goat cheese filling, and crispy roasted asparagus. Perfect for spring and summer brunches or light dinners.

  • 1 sheet frozen puff pastry (thawed)
  • 4 oz (115 g) goat cheese, softened
  • 2 tbsp heavy cream
  • 1 large egg
  • 1 tsp fresh lemon zest
  • Salt, to taste
  • Freshly ground black pepper, to taste
  • 1 bunch asparagus (about 1215 spears), trimmed and blanched
  • 1 tbsp extra virgin olive oil
  • Sea salt, to taste
  • Freshly ground black pepper, to taste
  • Optional: 1 tbsp grated Parmesan cheese

Instructions

  1. Preheat oven to 400°F (200°C). Line a baking sheet or tart pan with parchment paper.
  2. Trim woody ends off asparagus spears (about 1-2 inches). Blanch asparagus in boiling water for 2 minutes until bright green and tender-crisp. Transfer immediately to ice bath to stop cooking.
  3. Roll out thawed puff pastry on a lightly floured surface to fit tart pan or baking sheet with a half-inch border. Transfer to prepared pan and prick pastry all over with a fork to prevent bubbling.
  4. In a medium bowl, whisk together softened goat cheese, heavy cream, egg, lemon zest, salt, and pepper until smooth and creamy.
  5. Spread goat cheese filling evenly over puff pastry, leaving a small border around edges.
  6. Arrange blanched asparagus spears in a single layer over filling. Drizzle with olive oil and sprinkle with sea salt and freshly ground black pepper.
  7. Bake for 20–25 minutes until pastry is golden and crisp and filling is set but tender. Optional: sprinkle grated Parmesan over tart in last 5 minutes of baking.
  8. Remove from oven and let cool for 5–10 minutes before slicing.
  9. Serve warm or at room temperature, optionally garnished with fresh herbs like thyme or chives.

Notes

Thaw puff pastry properly to avoid cracking or stickiness. Blanch asparagus to keep it tender and vibrant. Tent tart with foil if edges brown too quickly. Let tart rest before slicing to prevent filling from oozing. Can substitute cream cheese with lemon juice if goat cheese is unavailable. For gluten-free option, use gluten-free puff pastry or almond flour crust.
