  • 1 large fresh lemon, zested and juiced
  • 3 cloves garlic, minced
  • 1 tablespoon fresh thyme, chopped (or 1 teaspoon dried thyme)
  • 1 teaspoon fresh rosemary, finely chopped
  • 1 teaspoon smoked paprika
  • 1 teaspoon kosher salt (adjust to taste)
  • ½ teaspoon freshly ground black pepper
  • Pinch of red pepper flakes (optional)

Instructions

  1. Pat the chicken thighs dry with paper towels to ensure crispy skin.
  2. In a small bowl, combine lemon zest and juice, minced garlic, chopped thyme and rosemary, olive oil, paprika, salt, pepper, and red pepper flakes if using. Stir well.
  3. Rub the lemon herb mixture all over the chicken thighs, including under the skin where possible.
  4. Place the chicken skin-side up on a wire rack set inside a rimmed baking sheet to allow air circulation.
  5. Preheat oven to 425°F (220°C) and bake chicken for 20 minutes to start crisping the skin.
  6. Reduce oven temperature to 375°F (190°C) and continue baking for another 10-15 minutes until internal temperature reaches 165°F (74°C) and juices run clear.
  7. Remove chicken from oven and let rest for 5 minutes before serving.
