A quick and easy recipe for crispy roasted Brussels sprouts coated in a sweet and tangy maple balsamic glaze, perfect for weeknights or special occasions.

Ingredients

Scale
  • 1 pound Brussels sprouts (about 450 grams), trimmed and halved
  • 2 tablespoons olive oil
  • ½ teaspoon salt, plus more to taste
  • ¼ teaspoon freshly ground black pepper
  • 2 tablespoons pure maple syrup
  • 2 tablespoons balsamic vinegar
  • ½ teaspoon garlic powder
  • Pinch of red pepper flakes (optional)

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. Trim off the stem ends and remove any yellow or damaged outer leaves from the Brussels sprouts. Slice each sprout in half lengthwise; quarter larger ones for even cooking. Rinse and pat dry thoroughly.
  3. In a large bowl, toss Brussels sprouts with olive oil, salt, and black pepper until evenly coated.
  4. Spread the sprouts cut-side down in a single layer on a large rimmed baking sheet, leaving space between them.
  5. Roast for 20-25 minutes until edges are dark golden brown and crispy. Flip them over at around 15 minutes if desired.
  6. While roasting, combine maple syrup, balsamic vinegar, and garlic powder in a small saucepan over medium heat. Stir gently and simmer for 5-7 minutes until slightly thickened and syrupy.
  7. Remove the baking sheet from the oven. Drizzle the warm glaze evenly over the roasted Brussels sprouts and toss gently to coat. Sprinkle red pepper flakes if using.
  8. Serve immediately for best texture and flavor.

Notes

For extra crispiness, broil glazed sprouts for 1-2 minutes at the end, watching closely to avoid burning. Rotate baking sheet halfway through roasting to avoid hot spots. Use dry sprouts for best crispiness. Maple syrup can burn quickly, so stir glaze gently and watch carefully.
