  • 3/4 cup granulated sugar
  • 3 large eggs, room temperature
  • 1/4 cup all-purpose flour, sifted

  • Pinch of salt
  • Optional: powdered sugar for dusting

Instructions

  1. Preheat your oven to 425°F (220°C). Lightly butter the ramekins and dust them with cocoa powder to prevent sticking.
  2. Melt the chocolate and butter together using a double boiler or microwave. Stir until smooth and shiny.
  3. In a separate bowl, whisk eggs and sugar until thick and pale, about 3-4 minutes.
  4. Fold the melted chocolate mixture gently into the egg mixture until just combined.
  5. Sift the flour and salt over the mixture, then fold in carefully.
  6. Pour the batter evenly into the prepared ramekins, filling about 3/4 full.
  7. Bake for 12-14 minutes until edges are set and center is slightly jiggly.
  8. Remove from oven and let sit for 1 minute. Run a knife around edges and invert onto plates.
  9. Dust with powdered sugar if desired and serve immediately.
