  • 3 tablespoons unsalted butter
  • 3 large garlic cloves, minced
  • ½ cup raw almonds, sliced or slivered
  • 1 tablespoon extra virgin olive oil
  • ½ teaspoon sea salt, or to taste
  • ¼ teaspoon freshly ground black pepper
  • Lemon zest from ½ lemon (optional)

Instructions

  1. Rinse green beans under cold water and trim the ends. Pat dry thoroughly with a clean towel.
  2. Heat ½ tablespoon olive oil in a large skillet over medium heat. Add sliced almonds and stir frequently for 2-3 minutes until golden and fragrant. Remove almonds and set aside.
  3. In the same pan, melt butter over medium heat. Let it bubble and foam, swirling gently until it turns light golden brown and smells nutty, about 2-3 minutes.
  4. Add minced garlic to the browned butter and stir constantly for about 30 seconds until fragrant but not burnt.
  5. Increase heat to medium-high and add green beans. Stir well to coat with garlic butter. Sauté for 6-8 minutes, stirring frequently, until beans are bright green and just tender but still crisp.
  6. Season with sea salt and black pepper. Stir in toasted almonds and lemon zest if using. Cook another minute to combine flavors.
  7. Transfer to a serving dish and serve immediately while warm.

Notes

Pat green beans dry to ensure crispness. Toast almonds separately to maximize crunch. Brown butter carefully to avoid burning. Add garlic after butter browns and cook just until fragrant. If beans brown too quickly before tender, add a splash of water and cover briefly to steam.
