These grilled potatoes are crispy on the outside and tender on the inside, coated with garlic and Parmesan for a flavorful, cheesy crust. Perfect as a side dish for BBQs or family dinners.

  • 2 pounds Yukon Gold or red potatoes, washed and cut into 1-inch chunks
  • 3 tablespoons extra virgin olive oil
  • 4 cloves garlic, finely minced
  • ½ cup finely grated Parmesan cheese
  • 2 tablespoons fresh parsley, chopped (optional)
  • 1 teaspoon kosher salt
  • ½ teaspoon freshly ground black pepper
  • ½ teaspoon smoked paprika or chili flakes (optional)

Instructions

  1. Wash and cut 2 pounds of Yukon Gold or red potatoes into roughly 1-inch chunks.
  2. Place potato chunks in a pot of cold salted water and bring to a boil. Cook for 10 to 12 minutes until just tender but still firm. Drain and let cool slightly.
  3. In a large bowl, combine 3 tablespoons olive oil, 4 minced garlic cloves, ½ cup grated Parmesan, 1 teaspoon salt, ½ teaspoon black pepper, and optional smoked paprika or chili flakes. Stir well.
  4. Add the cooled potatoes to the bowl and toss gently but thoroughly to coat each piece evenly with the seasoning mixture.
  5. Preheat grill to medium-high heat (375°F to 400°F). Lightly oil the grill grate and grill basket if using.
  6. Place potatoes in grill basket or on foil tray and grill over direct heat with lid closed for 15 to 20 minutes, turning every 5 minutes to brown all sides evenly.
  7. Once grilled to a golden crisp, transfer potatoes to a serving dish and sprinkle with 2 tablespoons chopped fresh parsley. Serve immediately.

Notes

Parboiling the potatoes before grilling is essential for a tender interior. Use your hands to toss potatoes in the seasoning for even coating. Keep grill temperature steady at medium-high to avoid burning garlic. If no grill is available, roast in a 425°F oven for 25-30 minutes, flipping halfway through. Store leftovers in an airtight container in the fridge for up to 3 days and reheat in a 400°F oven for 10-12 minutes to restore crispiness.
