Crispy Grilled Caesar Salad Recipe with Easy Creamy Parmesan Dressing

A smoky, crispy grilled romaine Caesar salad paired with a silky, tangy creamy Parmesan dressing. Perfect for quick weeknight dinners, summer barbecues, and potlucks.

  • 2 large heads of romaine lettuce, halved lengthwise
  • 2 tablespoons olive oil
  • Salt and freshly ground black pepper, to taste
  • 1 cup croutons
  • ½ cup mayonnaise
  • ⅓ cup freshly grated Parmesan cheese
  • 2 tablespoons fresh lemon juice
  • 1 teaspoon Dijon mustard
  • 2 cloves garlic, minced or pressed
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • Optional: 1 teaspoon Worcestershire sauce

Instructions

  1. Preheat your grill to medium-high heat (about 450°F or 230°C). If using a grill pan, heat it over medium-high on the stove until very hot. This step should take about 10 minutes.
  2. Rinse the lettuce heads well and pat dry. Slice each head in half lengthwise, keeping the core intact to hold the leaves together during grilling.
  3. Brush the romaine halves generously with olive oil on the cut side, then sprinkle with salt and pepper. Set aside.
  4. In a mixing bowl, whisk together mayonnaise, grated Parmesan, lemon juice, Dijon mustard, garlic, olive oil, and Worcestershire sauce if using. Season with salt and pepper to taste. This takes about 5 minutes.
  5. Place the lettuce halves cut side down on the hot grill. Grill for 2-3 minutes, until the edges start to char and the lettuce softens slightly but still holds its shape.
  6. Remove the romaine carefully with tongs and place on a serving platter cut side up.
  7. Drizzle or dollop the creamy Parmesan dressing over the grilled romaine. Sprinkle with croutons for crunch and extra Parmesan if desired.
  8. Serve immediately while the lettuce is warm and crisp.

Notes

If dressing thickens, whisk in a teaspoon of water or lemon juice to loosen. Keep grill grates clean and lightly oiled to prevent sticking. Use firm romaine heads for best grilling results. Dressing tastes better after resting a few hours in the fridge. For vegan version, use dairy-free mayo and Parmesan alternatives and omit Worcestershire sauce.
