Crispy Heart Shaped Eggs in Toast

  • 2 slices thick-cut sandwich bread (white, whole grain, brioche, or gluten-free)
  • 2 large eggs (room temperature)
  • 2 tablespoons unsalted butter (or margarine/vegan butter), divided
  • Salt, to taste
  • Black pepper, to taste
  • Optional: grated cheese (cheddar, mozzarella, etc.)
  • Optional: chopped herbs (parsley, chives, dill, basil, rosemary, etc.)

Instructions

  1. Take 2 slices of sandwich bread and use a heart-shaped cookie cutter (3-4 inches wide) to cut a heart out of the center of each slice. Save the cutouts for toasting.
  2. Spread about 1/2 tablespoon of butter on one side of each bread slice (butter both sides for extra crispiness if desired).
  3. Heat a nonstick skillet or frying pan over medium heat. Add 1/2 tablespoon butter and let it melt until sizzling.
  4. Place the bread slices, buttered side down, into the pan. Cook for about 1 minute until starting to turn golden.
  5. Crack 1 egg into a small bowl, then gently pour it into the heart opening of each bread slice. If the egg leaks, press the edges down with a spatula.
  6. Season the egg with salt and black pepper. Add herbs or cheese if desired.
  7. Cook for 3-4 minutes, until the egg white is set and the yolk is still a little runny (or longer for firm yolks). Lower heat if bread browns too quickly.
  8. Carefully flip the bread and egg using a thin spatula. Cook the other side for 1-2 minutes to crisp the top.
  9. Toast the heart-shaped bread cutouts in the pan, buttered side down, for 1-2 minutes until golden and crispy.
  10. Transfer finished hearts-in-toast to a plate. Garnish with extra herbs, cheese, or avocado slices. Serve hot with heart cutouts on the side.

Notes

For extra crispy edges, butter both sides of the bread and cook a bit longer before adding the egg. If the egg leaks, press the bread down with a spatula to seal. Use thick-cut bread for best results; thin bread may tear or get soggy. For gluten-free or vegan adaptations, use appropriate bread and egg substitutes. Pre-butter bread the night before for faster mornings. Toast heart cutouts for extra snacks.
