  • 1.5 pounds baby potatoes, washed and halved
  • 6 slices thick-cut bacon, cut into 1-inch strips
  • 2 tablespoons honey
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • Salt and pepper, to taste
  • Fresh parsley, chopped (optional)

Instructions

  1. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. In a large mixing bowl, toss the halved baby potatoes with olive oil, garlic powder, and a generous pinch of salt and pepper until evenly coated.
  3. Spread the potatoes out on the prepared baking sheet in a single layer, cut-side down.
  4. Scatter the bacon pieces over the potatoes.
  5. Drizzle honey evenly over the potatoes and bacon.
  6. Roast in the oven for 20 minutes.
  7. Using tongs, flip the potatoes and stir the bacon to ensure even cooking. Roast for another 20 minutes, or until the potatoes are golden brown and crispy, and the bacon is perfectly crisp.
  8. Remove from the oven and let cool for 5 minutes. Sprinkle with freshly chopped parsley before serving, if desired.

Notes

Ensure the potatoes are spread out in a single layer for even roasting. Keep an eye on the bacon during the second half of roasting to prevent burning.
