  • 1 teaspoon lemon juice
  • 1/2 cup walnut halves
  • 1 tablespoon granulated sugar
  • 1 teaspoon unsalted butter (optional)

Instructions

  1. Prepare the walnuts: In a small saucepan over medium heat, melt the butter (if using). Add walnuts and sugar, stirring constantly for 3-4 minutes until sugar melts and coats the nuts evenly. Transfer to parchment paper to cool.
  2. Make the batter: In a large bowl, whisk together flour, cornstarch, salt, and pepper. In a separate bowl, beat the egg with cold water. Pour wet mixture into dry ingredients and stir until just combined; batter should be slightly lumpy.
  3. Coat the shrimp: Pat shrimp dry with paper towels. Dip each shrimp into the batter, allowing excess to drip off, then place on a wire rack or plate.
  4. Heat the oil: Pour vegetable oil into a frying pan or wok about 2 inches deep. Heat over medium-high until oil reaches 350°F (175°C).
  5. Fry the shrimp: Fry shrimp in batches for 2-3 minutes until golden and crispy, turning once. Remove with slotted spoon and drain on paper towels. Keep warm in a low oven if needed.
  6. Prepare the honey walnut glaze: In a medium bowl, whisk together honey, mayonnaise, condensed milk, and lemon juice until smooth and glossy. Adjust lemon juice to taste.
  7. Toss and serve: Gently toss fried shrimp with the honey walnut glaze until evenly coated. Add caramelized walnuts on top and serve immediately.

Notes

Use ice-cold water in the batter to keep coating light and crisp. Do not overcrowd the pan to maintain oil temperature. Toast walnuts carefully to avoid burning. Toss shrimp with glaze just before serving to keep crispiness. Use a cooking thermometer for best frying results.
