  • 3/4 cup finely grated Parmesan cheese (about 75 grams)
  • 2 tablespoons extra virgin olive oil
  • 1/2 teaspoon garlic powder (optional)
  • Freshly ground black pepper, to taste
  • Sea salt, to taste
  • Optional: pinch of red pepper flakes
  • Optional: lemon zest

Instructions

  1. Preheat your oven to 400°F (200°C) and position the rack in the middle.
  2. Rinse and trim 1 pound of fresh asparagus, removing about 1 to 1.5 inches from the bottom. Pat dry thoroughly.
  3. In a mixing bowl, toss asparagus with 2 tablespoons olive oil, 1/2 teaspoon garlic powder, black pepper, and sea salt until evenly coated.
  4. Form bundles of 6 to 8 asparagus spears each. Sprinkle about 2 tablespoons of finely grated Parmesan over each bundle, pressing lightly to adhere.
  5. Secure bundles with kitchen twine or thin strips of parchment paper to keep them neat during roasting.
  6. Place bundles on a parchment-lined baking sheet, spacing them apart for even heat circulation.
  7. Roast for 12 to 15 minutes, watching closely after 10 minutes until Parmesan is golden and crispy and asparagus is tender but bright green.
  8. Remove from oven and let rest for 2 minutes to allow cheese to crisp further.
  9. Serve warm, optionally with a squeeze of fresh lemon juice or a sprinkle of red pepper flakes.

Ensure asparagus is thoroughly dried before tossing with oil to help cheese crisp. Preheat oven fully for best results. Rotate baking sheet halfway through roasting if needed. Let bundles rest after roasting to set the cheese crust. If no kitchen twine, press Parmesan firmly to hold bundles or use parchment strips.
