Golden, crispy roasted potatoes coated in Parmesan cheese, garlic, and herbs. Perfect for a weeknight dinner or special occasion.

  • 1.5 pounds gold or red potatoes, cut into bite-sized chunks
  • 3 tablespoons olive oil
  • ½ cup freshly grated Parmesan cheese
  • 2 large cloves garlic, minced
  • 1 teaspoon Italian seasoning
  • 1 teaspoon paprika
  • ½ teaspoon salt
  • ½ teaspoon freshly ground black pepper
  • Fresh parsley, chopped for garnish

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. Wash and scrub the potatoes well. Cut them into even, bite-sized chunks (about 1-inch pieces).
  3. In a large mixing bowl, combine olive oil, minced garlic, Italian seasoning, paprika, salt, pepper, and half of the grated Parmesan cheese. Stir until well combined.
  4. Add the potato chunks to the mixing bowl and toss them until they’re evenly coated with the seasoning mixture.
  5. Line a baking sheet with parchment paper or lightly greased foil. Spread the seasoned potatoes out in a single layer.
  6. Sprinkle the remaining Parmesan cheese evenly over the potatoes.
  7. Place the baking sheet in the oven and roast for 25-30 minutes, flipping the potatoes halfway through.
  8. Check for doneness. Roast for an additional 5 minutes if needed for extra crispiness.
  9. Remove the potatoes from the oven and sprinkle with fresh parsley. Serve warm and enjoy!
