  • 10 ounces (about 283g) marshmallows, regular or mini
  • 3 tablespoons (about 42g) unsalted butter, softened
  • 1 teaspoon vanilla extract
  • 34 sheets red and white fruit leather
  • Non-stick cooking spray or butter for greasing the pan

Instructions

  1. Lightly grease a 9×13 inch (23×33 cm) baking pan with butter or non-stick spray. Line with parchment paper if desired.
  2. In a large saucepan over low heat, melt 3 tablespoons (42g) of unsalted butter without browning it, about 2-3 minutes.
  3. Add 10 ounces (283g) of marshmallows to the melted butter and stir constantly with a non-stick spatula until fully melted and smooth, about 5 minutes.
  4. Remove the pan from heat and stir in 1 teaspoon of vanilla extract.
  5. Pour the melted marshmallow mixture over 6 cups (180g) of Rice Krispies cereal in a large bowl. Stir quickly but gently to coat evenly, about 2-3 minutes.
  6. Transfer the mixture into the prepared pan. Using a buttered spatula or wax paper, press the mixture evenly and firmly without over-compressing, about 3-4 minutes.
  7. Let the mixture cool and set at room temperature for at least 30 minutes.
  8. While cooling, use a star-shaped cookie cutter or scissors to cut stars from red and white fruit leather sheets.
  9. Once set, cut the Rice Krispie base into rectangles or squares resembling flag stripes.
  10. Arrange the fruit leather stars on the top-left corner or scatter as desired. Press gently to adhere without tearing.
  11. Serve immediately or store in an airtight container at room temperature for up to 3 days.

Melt butter and marshmallows on low heat to avoid burning. Work quickly when mixing marshmallows with cereal to prevent hardening. Press mixture lightly to keep treats airy. Dust hands with cornstarch or keep scissors dry when cutting fruit leather stars to prevent sticking. Store in airtight container at room temperature; avoid refrigeration to maintain crispness. Freeze for longer storage and thaw at room temperature before serving.
