  • 2 large eggs, room temperature

  • ½ cup (113 g) unsalted butter, melted and slightly cooled (use dairy-free butter if needed)
  • 1 teaspoon vanilla extract
  • Strawberries, hulled and sliced (fresh or frozen)
  • Blueberries or raspberries, washed and dried
  • Banana slices, ripe but firm
  • Chopped nuts (toasted pecans or walnuts)
  • Fresh mint leaves, torn
  • Maple syrup or honey for drizzling
  • Greek yogurt or whipped cream for dolloping
  • Powdered sugar for dusting (optional)

Instructions

  1. Preheat your waffle iron according to manufacturer’s instructions, about 5 minutes. If using a cast iron waffle pan, heat on medium for 5–7 minutes.
  2. In a large bowl, whisk together flour, sugar, baking powder, and salt until evenly combined.
  3. In a separate bowl, beat eggs until frothy. Add milk, melted butter, and vanilla extract. Whisk until smooth.
  4. Pour wet ingredients into dry ingredients and gently fold with a spatula just until combined; lumps are okay.
  5. Lightly grease waffle iron with a silicone brush dipped in melted butter. Pour about ½ cup batter per waffle. Close lid and cook 4–5 minutes until golden brown and crispy.
  6. Place cooked waffles on a wire rack over a baking sheet in a 200°F (95°C) oven to keep warm and crisp.
  7. While waffles cook, prepare toppings: wash and slice fruits, toast nuts in a dry skillet for 3–4 minutes, and set syrups or yogurt in small bowls.
  8. Arrange waffles on a large board or platter. Surround with bowls of fresh fruit, nuts, yogurt or whipped cream, and syrup. Garnish with torn mint leaves.
  9. Serve immediately and invite guests to build their own waffle stacks with desired toppings.

Do not overmix batter to avoid tough waffles. Use melted butter in batter for crispness. Preheat waffle iron thoroughly. Cook waffles individually and keep warm on wire rack to maintain crispness. Toast nuts separately for best flavor. For vegan option, replace eggs with flax eggs and use plant-based milk and butter. Gluten-free flour can be substituted 1:1 with adjustments to liquid.
