A quick and easy single-serving brownie sundae combining warm, fudgy brownies with rich vanilla ice cream, homemade whipped cream, hot fudge, and toasted nuts for a perfect solo indulgence.

Ingredients

Scale
  • 2 tablespoons unsalted butter
  • 1/4 cup granulated sugar
  • 2 tablespoons brown sugar
  • 1 large egg (room temperature)
  • 1/2 teaspoon vanilla extract
  • 1/4 cup all-purpose flour (sifted)
  • 2 tablespoons unsweetened cocoa powder
  • Pinch of salt
  • 2 tablespoons chocolate chips (optional)
  • 1 large scoop vanilla ice cream
  • 2 tablespoons heavy cream
  • 1 teaspoon powdered sugar
  • 2 tablespoons hot fudge sauce
  • 1 tablespoon chopped toasted nuts (walnuts or pecans, optional)
  • Fresh mint leaves (optional)

Instructions

  1. Preheat your toaster oven to 350°F (175°C) or prepare your microwave. Lightly grease your microwave-safe mug or small oven-safe ramekin with butter or nonstick spray.
  2. In a mixing bowl, melt the butter in the microwave for about 20 seconds until just melted. Add granulated sugar, brown sugar, the egg, and vanilla extract. Whisk briskly until smooth and slightly fluffy.
  3. Sift together the flour, cocoa powder, and a pinch of salt. Gradually fold the dry mix into your wet ingredients, stirring gently until just combined. Toss in the chocolate chips if using. The batter should be thick but spoonable.
  4. Pour the batter into your prepared mug or ramekin. For toaster oven baking, place it on the middle rack and bake for 15-18 minutes until edges look set but center stays slightly gooey. For microwave baking, cook on high for 50-60 seconds, checking at 50 seconds to avoid overcooking.
  5. While the brownie bakes or cools slightly, whip the heavy cream with powdered sugar until soft peaks form. If no mixer is available, shake the cream vigorously in a jar for 3-4 minutes.
  6. Once the brownie is warm but not piping hot, add a generous scoop of vanilla ice cream on top. Dollop the whipped cream, drizzle warm hot fudge sauce, and sprinkle chopped toasted nuts. Garnish with fresh mint leaves if desired.
  7. Enjoy your Decadent Breakup Brownie Sundae for One immediately.

Notes

If baking in microwave, start checking at 50 seconds to avoid overcooking. Rotate mug halfway through toaster oven baking for even cooking. Use room temperature egg for better texture. Warm hot fudge sauce before drizzling. Whip cream to soft peaks for best texture. For dairy-free, swap butter with coconut oil and use dairy-free ice cream and cream. For gluten-free, substitute all-purpose flour with almond flour or gluten-free blend. Variations include adding espresso powder, peanut butter swirl, or seasonal toppings.
