A rich and tender French dessert combining bittersweet dark chocolate and juicy cherries in a silky custard batter, perfect for an easy yet impressive treat.

  • 2 cups fresh cherries, pitted
  • 3 ounces dark chocolate (60-70% cocoa), chopped or chips
  • 3 large eggs, room temperature
  • 1 cup whole milk (240 ml)
  • 1/2 cup all-purpose flour (65 grams)
  • 1/3 cup granulated sugar (65 grams)
  • 1 teaspoon vanilla extract
  • Pinch of salt
  • Unsalted butter for greasing the pan

Instructions

  1. Preheat the oven to 350°F (175°C) and butter an 8-inch oven-safe baking dish generously.
  2. Pit the cherries and spread them evenly in the bottom of the prepared baking dish.
  3. Melt the dark chocolate gently using a microwave in 20-second bursts or over a double boiler, stirring frequently until smooth and glossy.
  4. In a large bowl, whisk together the eggs, sugar, and salt until light and slightly frothy, about 2 minutes.
  5. Add the milk and vanilla extract to the egg mixture and whisk to combine.
  6. Gradually sift in the flour and stir gently until smooth.
  7. Fold the melted dark chocolate into the batter until it turns a rich, velvety brown color.
  8. Pour the batter evenly over the cherries in the baking dish.
  9. Bake on the center rack for 35-40 minutes until the custard is set but still slightly wobbly in the center and the edges are golden and puffed.
  10. If edges brown too quickly, tent loosely with foil halfway through baking.
  11. Let the clafoutis rest for 10-15 minutes before serving to allow it to firm up.

Notes

Use frozen cherries if fresh are not in season; thaw and drain excess liquid before use. For gluten-free, substitute all-purpose flour with almond flour. Avoid overmixing the batter to keep the clafoutis tender. Let it cool before slicing for best texture. Tent with foil if edges brown too fast.
