  • 1/4 teaspoon salt
  • 1/2 cup festive sprinkles (small round nonpareils and tiny stars recommended)
  • Optional: 1/4 cup (45g) chocolate chips (dark or semi-sweet)
  • Optional: 1/4 teaspoon espresso powder

Instructions

  1. Preheat your oven to 350°F (175°C). Lightly grease your mini muffin tin or line with small paper liners.
  2. In a medium bowl, whisk together the melted butter and granulated sugar until smooth and slightly glossy, about 2 minutes.
  3. Add the eggs one at a time, whisking well after each addition to incorporate air and create a velvety texture. Stir in the vanilla extract.
  4. In a separate bowl, sift together the all-purpose flour, cocoa powder, salt, and espresso powder (if using).
  5. Gently fold the dry mixture into the wet ingredients using a spatula. Stop as soon as the mixture is combined to avoid overmixing.
  6. Reserve about 2 tablespoons of sprinkles for topping. Fold the remaining sprinkles and optional chocolate chips carefully into the batter.
  7. Spoon batter into the mini muffin tin, filling each cup about 3/4 full. Sprinkle the reserved sprinkles on top of each to mimic a firework explosion.
  8. Bake for 12-15 minutes, starting to check at 12 minutes with a toothpick. It should come out with a few moist crumbs but not wet batter.
  9. Let the brownie bites cool in the tin for 10 minutes, then transfer to a cooling rack to cool completely.
