A juicy stuffed burger combining sizzling beef, pepperoni, melty mozzarella, and tangy pizza sauce for a bold, comforting meal that’s quick and easy to make.

Ingredients

Scale
  • 1 pound (450g) ground beef (80/20 blend preferred)
  • 1215 pepperoni slices, chopped
  • 1 cup shredded mozzarella cheese (whole milk recommended)
  • 1/4 cup pizza sauce (homemade or store-bought)
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon Italian seasoning
  • Salt and black pepper to taste
  • Olive oil or cooking spray for grilling or pan-frying
  • 4 sturdy burger buns (brioche recommended)
  • Optional toppings: fresh basil, sliced tomatoes, sautéed mushrooms

Instructions

  1. In a large mixing bowl, combine ground beef with garlic powder, onion powder, Italian seasoning, salt, and pepper. Mix gently until just combined (about 3 minutes).
  2. Divide the beef mixture into 8 equal portions. Flatten 4 portions into thin, roughly 4-inch circles to form the bottom halves of the stuffed burgers (5 minutes).
  3. On each base patty, layer 3-4 tablespoons of pizza sauce, 3-4 tablespoons of shredded mozzarella, and chopped pepperoni slices evenly, avoiding overloading (5 minutes).
  4. Flatten the remaining 4 beef portions similarly. Place one on top of each filled patty and press edges firmly to seal the filling inside, shaping into a thick patty about 1 inch thick. Check for gaps to prevent leakage (7 minutes).
  5. Preheat a grill pan or cast iron skillet over medium-high heat. Add olive oil or spray to prevent sticking (3 minutes).
  6. Cook the stuffed burgers for 4-5 minutes per side, flipping gently. Use a meat thermometer to ensure internal temperature reaches 160°F (71°C) and cheese is melted (10 minutes).
  7. Optionally, toast the buns on a separate pan or grill for 1-2 minutes until golden (2 minutes).
  8. Assemble burgers by placing each stuffed patty on a bun and adding optional toppings. Serve immediately to enjoy the gooey cheese pull (2 minutes).

Notes

Do not overmix the beef to keep patties tender. Seal edges firmly to prevent cheese leakage; use a little water or egg wash if needed. Chill patties for 10-15 minutes before cooking if they start leaking. Use a meat thermometer to ensure burgers reach 160°F internal temperature. Rest burgers a few minutes before serving for best texture. Toast buns to prevent sogginess.
