  • 2 cups (200g) shredded cheddar cheese
  • 1 cup (100g) shredded Monterey Jack cheese
  • ½ cup (120ml) sour cream
  • 2 fresh jalapeños, sliced thinly
  • 1 medium tomato, diced
  • 2 stalks green onions, chopped
  • 1 ripe avocado, diced or mashed (optional)
  • Handful fresh cilantro, chopped
  • Lime wedges for squeezing

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Heat a large skillet over medium heat. Add a splash of oil if needed, then sauté the diced onion for 2-3 minutes until translucent.
  3. Add minced garlic and cook for another 30 seconds until fragrant.
  4. Add ground beef, breaking it up with a spatula. Cook for 6-8 minutes until browned and fully cooked.
  5. Sprinkle chili powder, cumin, paprika, salt, pepper, and crushed red pepper flakes (if using) over the beef. Stir well and cook for 2 more minutes. Taste and adjust seasoning.
  6. On a baking sheet, spread an even layer of tortilla chips.
  7. Scatter half the cooked beef evenly over the chips.
  8. Sprinkle half the cheddar and Monterey Jack cheeses on top.
  9. Repeat with another layer of chips, beef, and cheeses.
  10. Bake in the oven for 8-10 minutes until cheese is melted and bubbly. For a golden top, broil for 1-2 minutes watching carefully.
  11. Remove from oven and scatter diced tomatoes, jalapeños, green onions, and cilantro over the hot nachos.
  12. Dollop sour cream generously and add avocado if using.
  13. Squeeze fresh lime juice over the top before serving.
  14. Serve immediately while hot and cheesy.
