  • 3 medium bell peppers (mixed colors: red, yellow, green)
  • 1 large onion (yellow or white, sliced)
  • 2 tablespoons extra virgin olive oil
  • 3 cloves garlic (minced)
  • Optional: pinch of red pepper flakes
  • Optional: dried Italian herbs

Instructions

  1. Slice the bell peppers into thin strips about 1/2 inch wide. Peel and slice the onion into similar-sized strips. Mince the garlic cloves finely.
  2. Heat 1 tablespoon of olive oil in a large skillet over medium-high heat. Add the sausage links whole and brown on all sides, turning every 2-3 minutes for about 8-10 minutes until golden but not fully cooked. Remove sausages and set aside.
  3. Lower heat to medium and add the remaining tablespoon of olive oil. Add the sliced onions and peppers. Stir occasionally and cook for about 8 minutes until they start to soften and caramelize slightly. Add minced garlic during the last 2 minutes.
  4. Slice the browned sausages into 1/2-inch pieces and return them to the pan with the peppers and onions. Stir together, cover the pan, reduce heat to low, and simmer for 5-7 minutes until sausage is cooked through and flavors meld.
  5. Uncover, stir, and taste. Adjust seasoning with salt and pepper if needed. Sprinkle red pepper flakes if desired. Serve hot, straight from the pan or over rice, pasta, or crusty bread.

Notes

If sausages are thick, slice in half lengthwise before browning to speed cooking. Avoid overcrowding the pan when sautéing peppers to ensure they soften properly. Use fresh garlic for best flavor. Reheat leftovers gently in a skillet to maintain texture.
