  • 1 ½ cups beef broth (low-sodium recommended)
  • 1 packet onion soup mix (about 1 oz)
  • 34 garlic cloves, minced
  • 2 tablespoons unsalted butter
  • Optional: fresh herbs like rosemary or thyme
  • Optional: salt and pepper to taste

Instructions

  1. Pat beef chuck roast dry with paper towels. Season lightly with salt and freshly cracked black pepper on all sides.
  2. Heat butter in a large skillet over medium-high heat until melted and sizzling. Sear the roast for about 4-5 minutes per side until golden-brown crust forms. (Optional but recommended.)
  3. Place the browned roast into the slow cooker. Sprinkle the onion soup mix evenly over the top. Add minced garlic around and on top of the roast, then pour beef broth over everything.
  4. Cover and cook on low for 8 hours or on high for 4-5 hours until the meat is tender and shreds easily.
  5. Check doneness with a fork; if not tender, continue cooking and check every 30 minutes.
  6. Remove roast from slow cooker and let rest on a cutting board for about 10 minutes before slicing or shredding.
  7. Optional: For thicker gravy, remove roast and simmer cooking liquid in a saucepan. Whisk in a slurry of 1 tablespoon cornstarch mixed with 2 tablespoons cold water until thickened.
