  • 6 large store-bought croissants, preferably day-old or slightly stale
  • 8 ounces diced cooked ham
  • 2 cups shredded sharp cheddar cheese
  • 6 large eggs, room temperature
  • 1 ½ cups whole milk
  • 1 tablespoon Dijon mustard
  • Salt and pepper to taste
  • 2 tablespoons unsalted butter, melted
  • 2 finely sliced green onions (optional)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Slice each croissant into roughly 1-inch pieces. If croissants are very fresh, toast lightly for 5 minutes to firm them up.
  3. In a large bowl, toss the diced ham with 1 ½ cups of shredded cheddar cheese.
  4. In another bowl, whisk together the eggs, milk, melted butter, Dijon mustard, salt (about ½ teaspoon), and pepper until smooth and slightly frothy.
  5. Gently fold the croissant pieces into the ham and cheese mixture. Pour the egg custard over the croissant mixture and stir gently to coat evenly. Let sit for about 5 minutes to allow croissants to soak up the custard.
  6. Grease a 9×13-inch baking dish lightly with butter or non-stick spray. Pour the croissant custard mixture into the dish and spread evenly. Sprinkle the remaining ½ cup cheddar cheese on top.
  7. Bake for 30 to 35 minutes, or until the top is golden and a knife inserted in the center comes out clean.
  8. Let the bake cool for 5 minutes before serving. Garnish with sliced green onions if desired.
