  • 23 no-boil lasagna noodles (or regular cooked according to package instructions)
  • ½ cup marinara sauce
  • ¼ cup ricotta cheese (small-curd preferred)
  • ½ cup shredded mozzarella cheese (freshly shredded)
  • 2 tbsp grated parmesan cheese
  • ⅓ cup cooked and drained ground beef or turkey (optional)
  • A few fresh basil leaves, chopped
  • ½ tsp garlic powder
  • Salt and pepper to taste
  • 1 tsp olive oil (for sautéing if using meat)
  • 1 small egg, beaten

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. If using meat, heat 1 tsp olive oil in a small skillet over medium heat. Add ⅓ cup ground beef or turkey, season with salt, pepper, and ½ tsp garlic powder. Cook until browned and cooked through, about 5-7 minutes. Drain excess fat and set aside.
  3. In a mixing bowl, combine ¼ cup ricotta cheese with 1 beaten egg and a pinch of salt and pepper.
  4. Spoon 2 tbsp marinara sauce into the bottom of an oven-safe small baking dish or ramekin.
  5. Place one lasagna noodle on top of the sauce (no-boil noodles do not require pre-cooking).
  6. Spread a layer of the ricotta mixture over the noodle, then sprinkle with cooked meat or veggies if using.
  7. Add 2 tbsp marinara sauce over the ricotta layer, then sprinkle 2 tbsp shredded mozzarella cheese.
  8. Place a second noodle on top and repeat the layers: ricotta mixture, meat or veggies, marinara sauce, mozzarella cheese.
  9. For the final layer, place the last noodle, top with remaining marinara sauce, shredded mozzarella, and 2 tbsp grated parmesan cheese.
  10. Cover loosely with aluminum foil and bake for 25 minutes.
  11. Remove the foil and bake for another 5-7 minutes until the cheese is bubbly and golden.
  12. Let the lasagna rest for 5 minutes before serving.
