These easy chocolate chip banana muffins are tender, moist, and perfect for lunchboxes. They hold their shape beautifully, taste even better the next day, and come together in one bowl with simple ingredients.

  • 3 medium ripe bananas (about 1 cup mashed)
  • 1/3 cup unsalted butter, melted
  • 1/2 cup granulated sugar
  • 1 large egg, room temperature
  • 1 teaspoon vanilla extract
  • 1 1/2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/4 teaspoon salt
  • 3/4 cup mini chocolate chips

Instructions

  1. Preheat oven to 350°F (175°C). Line a 12-cup muffin tin with paper liners or spray with non-stick cooking spray.
  2. Peel bananas and mash in a medium bowl with a fork or potato masher until mostly smooth with a few small lumps (about 1 cup).
  3. Add melted butter, granulated sugar, egg, and vanilla extract to the mashed bananas. Whisk until combined and smooth.
  4. In a separate bowl, whisk together flour, baking soda, and salt.
  5. Add dry ingredients to wet ingredients. Fold gently with a rubber spatula just until no streaks of flour remain (12-15 folds). Batter should be slightly lumpy.
  6. Fold in mini chocolate chips with 4-5 gentle strokes. Reserve about 2 tablespoons of chips to sprinkle on top.
  7. Divide batter evenly among 12 muffin cups, filling each about 3/4 full. Sprinkle reserved chocolate chips on top.
  8. Bake for 18-22 minutes, until a toothpick inserted in the center comes out clean or with a few moist crumbs. Tops should be golden brown and spring back when pressed.
  9. Let muffins cool in the pan for 5 minutes, then transfer to a wire cooling rack to cool completely.
  10. Enjoy warm or at room temperature. For lunchboxes, cool completely before packing.

Notes

Don’t overmix the batter—a few lumps are fine. Use overripe bananas (brown spots) for best sweetness and moisture. Room temperature ingredients help emulsify properly. Muffins taste even better on day two. For freezing, cool completely, freeze in a single layer, then store in a freezer-safe bag for up to 3 months.
