Easy Creamy Blueberry Yogurt Parfait Jars for Healthy Meal Prep

A quick and wholesome parfait recipe combining creamy Greek yogurt, fresh blueberries, granola, and a touch of honey, perfect for meal prep and busy mornings.

Ingredients

  • 2 cups (475 ml) plain Greek yogurt
  • 1 cup (150 g) fresh blueberries
  • 2 tablespoons (30 ml) honey
  • 1 cup (100 g) granola
  • 1 teaspoon (5 ml) vanilla extract
  • Optional: 2 oz (60 g) cream cheese or mascarpone, softened
  • Optional: 1 tablespoon (15 g) chia seeds
  • Optional: 1 teaspoon (5 g) lemon zest

Instructions

  1. In a mixing bowl, combine 2 cups plain Greek yogurt with 1 teaspoon vanilla extract and 2 tablespoons honey. If using cream cheese or mascarpone, fold it gently into the yogurt mixture until smooth and creamy.
  2. Rinse 1 cup fresh blueberries and pat dry. If using frozen, thaw and drain excess water.
  3. Layer the parfait jars by spooning a couple of tablespoons of the yogurt mixture into the bottom of each jar, followed by a spoonful of blueberries and a sprinkle of granola (about 2 tablespoons). Repeat layers once more, finishing with granola on top.
  4. Optionally, sprinkle 1 teaspoon chia seeds or lemon zest over the top of each jar.
  5. Seal the jars and refrigerate for at least 1 hour or overnight to let flavors meld and granola soften slightly.

Notes

Use thick Greek yogurt to avoid watery parfaits. Soften cream cheese or mascarpone before folding in for extra creaminess. Keep granola near the top to maintain crunch. Fresh blueberries should be firm and ripe. Parfaits keep well refrigerated for 3-4 days. Add fresh granola before eating for maximum crunch.
