Instructions

  1. In a medium bowl, combine 8 oz (225 g) softened cream cheese and 2 tablespoons mayonnaise. Mix until smooth and creamy, about 2 minutes. (Optional: use a hand mixer or food processor for ultra-smooth texture.)
  2. Stir in 2 tablespoons finely chopped fresh dill, 3 thinly sliced green onions, 1 tablespoon fresh lemon juice, 1/2 teaspoon garlic powder, and salt and pepper to taste. Mix thoroughly.
  3. Fold in 1 cup (150 g) shredded cooked chicken or turkey and 1/2 cup (50 g) shredded cheese (cheddar or Swiss), if using.
  4. Gently mix in 1/2 cup thinly sliced cucumber or bell peppers for texture and freshness.
  5. Lay out one large flour tortilla on a clean surface. Spread about 1/3 to 1/2 cup of the creamy filling evenly over the tortilla, leaving a small border around the edges.
  6. Starting from one edge, roll the tortilla up tightly but without squeezing out the filling. Repeat with remaining tortillas and filling.
  7. Wrap the rolled tortillas tightly in plastic wrap and refrigerate for at least 15 minutes to help the filling set and make slicing cleaner.
  8. Using a sharp serrated knife, cut each roll into 1-inch (2.5 cm) thick pinwheels. Arrange the pinwheels on a large serving platter, alternating colors if making different flavor combinations.
  9. Decorate the platter with fresh parsley or dill sprigs, cherry tomatoes, or olives for a festive touch.
