  • 1 cup (120 g) powdered sugar, sifted
  • 1 teaspoon vanilla extract
  • 1/2 cup (120 ml) heavy whipping cream
  • 1/4 cup (30 g) rainbow sprinkles
  • 1/2 cup (60 g) mini cookie pieces (vanilla wafers or animal crackers, crushed)

Instructions

  1. Soften the cream cheese by leaving it out at room temperature for about 30 minutes.
  2. In a mixing bowl, beat the softened cream cheese and powdered sugar with an electric mixer on medium speed until smooth and creamy, about 2-3 minutes. Scrape down the sides as needed.
  3. Add vanilla extract and mix until fully incorporated.
  4. In a separate bowl, whip the heavy cream until soft peaks form, about 3-4 minutes on medium-high speed.
  5. Gently fold the whipped cream into the cream cheese mixture using a spatula to keep it light and fluffy.
  6. Fold in the rainbow sprinkles and mini cookie pieces, reserving a few for garnish if desired.
  7. Cover the bowl with plastic wrap and refrigerate for at least 1 hour before serving to allow flavors to meld and the dip to firm up.

Notes

If dip is too thick after chilling, stir in a tablespoon of milk or cream to loosen. If too runny, add more powdered sugar and chill longer. Softening cream cheese before mixing is essential to avoid lumps. Stop whipping cream at soft peaks to prevent graininess. Gently fold whipped cream and mix-ins to keep dip airy. Refrigerate at least 1 hour before serving. Store leftovers in airtight container in fridge up to 3 days; do not freeze.
