Instructions

  1. Activate the yeast: In a small bowl, whisk together 1 cup (240 ml) warm water (110°F/43°C), 1 tbsp sugar, and 2 ¼ tsp active dry yeast. Let it sit for 5-7 minutes until foamy and bubbly.
  2. Mix the dough: In a large bowl, combine 2 ½ cups (300 g) all-purpose flour and 1 tsp salt. Add the softened cream cheese (2 tbsp) and olive oil (1 tbsp). Pour in the yeast mixture and stir until a shaggy dough forms. Add flour 1 tbsp at a time if dough is too sticky.
  3. Knead the dough: Turn dough onto a lightly floured surface and knead for 8-10 minutes until smooth and elastic, or use a stand mixer with dough hook on medium speed for 6-7 minutes.
  4. First rise: Lightly oil a large bowl, place dough inside, cover, and let rise in a warm spot for 1 hour or until doubled in size.
  5. Shape bagel bites: Punch down dough, roll out to ½-inch thickness, and cut into 2-inch diameter circles. Place 15-18 pieces on a parchment-lined baking sheet.
  6. Pre-bake: Bake at 400°F (205°C) for 8 minutes until firm but not browned.
