Instructions

  1. Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. Drain and rinse chickpeas. Pat dry thoroughly with a kitchen towel or paper towels. Let sit for 5 minutes.
  3. In a medium bowl, toss dried chickpeas with olive oil, smoked paprika, garlic powder, onion powder, cayenne (if using), salt, and black pepper until evenly coated.
  4. Spread chickpeas in a single layer on the prepared baking sheet. Roast for 20 minutes.
  5. Shake the pan to flip chickpeas, then roast for another 10-15 minutes until golden brown and firm.
  6. Remove from oven and let cool on the pan for 10 minutes, or transfer to a cooling rack.
  7. In a large bowl, combine cooled chickpeas with pretzel sticks, almonds, and sunflower seeds. Add optional mix-ins if desired. Toss gently.
  8. Serve immediately or store in an airtight container at room temperature for up to 5 days.
