Ingredients

Scale
  • 1 lb ground turkey (450 g)
  • 1 tbsp olive oil (15 ml)
  • 1 small yellow onion, finely chopped
  • 2 cloves garlic, minced
  • 1 tsp ground cumin (2 g)
  • 1 tsp smoked paprika (2 g)
  • 1 tsp chili powder (2 g)
  • ½ tsp salt (3 g)
  • ¼ tsp black pepper (1 g)
  • 2 tbsp fresh lime juice (30 ml)
  • ¼ cup fresh cilantro, chopped (15 g)
  • 1 head iceberg or butter lettuce leaves
  • Optional toppings: avocado slices, sour cream or Greek yogurt, shredded cheese (cheddar or Monterey Jack), diced tomatoes or salsa

Instructions

  1. Prep your ingredients: finely chop the onion and garlic, chop cilantro, and carefully separate the lettuce leaves. Rinse and pat dry the lettuce so it’s crisp and ready to hold the filling. Set aside the lime for juicing later.
  2. Heat 1 tablespoon olive oil in a large skillet over medium heat until shimmering but not smoking.
  3. Add chopped onion to the skillet and cook, stirring occasionally, until softened and translucent (3-4 minutes).
  4. Add minced garlic and cook for another 30 seconds until fragrant, being careful not to burn it.
  5. Add the ground turkey, breaking it apart with a spatula. Cook until no longer pink and starting to brown in spots, about 8-10 minutes. Drizzle a little more olive oil if the pan looks dry.
  6. Sprinkle in cumin, smoked paprika, chili powder, salt, and black pepper. Stir well to coat the turkey evenly with spices. Cook for another 1-2 minutes to let flavors meld.
  7. Remove from heat and stir in fresh lime juice and chopped cilantro.
  8. Assemble the wraps by spooning the turkey mixture into each lettuce leaf. Top with optional avocado slices, sour cream, cheese, or salsa as desired. Serve immediately.

Notes

If lettuce leaves are floppy, chill them in the fridge for 15 minutes before assembling to help hold their shape. Taste the turkey mixture before serving and adjust seasoning as needed. Avoid overcrowding the pan to ensure proper browning. Leftover turkey filling can be stored in the refrigerator for up to 3 days; reheat gently on the stovetop. Do not microwave to avoid rubbery texture. Use iceberg lettuce for sturdiness or butter lettuce for a delicate touch.
