A quick and easy lunch recipe featuring tender turkey roll-ups with a creamy herb filling paired with colorful, fresh fruit kabobs. Perfect for lunchboxes, picnics, or light dinners.

Ingredients

Scale
  • 8 slices deli turkey breast (thinly sliced, low-sodium preferred)
  • 4 oz cream cheese, softened (full fat or light)
  • 1 tbsp fresh chives, finely chopped
  • 1 tbsp fresh parsley, chopped
  • 1 tsp Dijon mustard
  • Salt and pepper, to taste
  • 1 cup strawberries, hulled and halved
  • 1 cup seedless grapes (red, green, or mixed)
  • 1 cup pineapple chunks (fresh or canned in juice, drained)
  • 1 cup melon balls (cantaloupe or honeydew)
  • Wooden or bamboo skewers (about 8 inches long)

Instructions

  1. In a small bowl, combine softened cream cheese, chopped chives, parsley, and Dijon mustard. Mix until smooth and season with salt and pepper.
  2. Lay out turkey slices flat on a clean cutting board, pressing gently if needed to make them even and pliable.
  3. Spread about 1 tablespoon of the cream cheese mixture evenly over each turkey slice, leaving a small border around the edges.
  4. Roll each turkey slice tightly into a cylinder and place seam-side down on a plate.
  5. Thread fruit onto skewers in an alternating pattern: strawberries, grapes, pineapple, melon balls, filling the skewer without overcrowding.
  6. Arrange turkey roll-ups and fruit kabobs in a bento box or lunch container, cover, and refrigerate for at least 15 minutes before serving.

Notes

Use softened cream cheese for easier spreading. Wrap roll-ups tightly in plastic wrap if packing for lunchboxes. Keep fruit kabobs fresh by storing with a damp paper towel in an airtight container. Seasonal fruit substitutions work well. Refrigerate assembled bento box until serving.
