A quick and easy garlic butter shrimp scampi recipe ready in 15 minutes, perfect for busy weeknights or last-minute dinners. This dish features tender shrimp sautéed in a buttery garlic sauce with a bright lemon finish.

Ingredients

Scale
  • 1 pound large shrimp, peeled and deveined
  • 4 tablespoons unsalted butter, softened
  • 4 cloves garlic, minced
  • 1 tablespoon olive oil
  • 2 tablespoons fresh lemon juice
  • 1/4 cup white wine or chicken broth (optional)
  • 1/4 teaspoon red pepper flakes (optional)
  • 2 tablespoons fresh parsley, chopped
  • Salt and black pepper to taste
  • Pasta or bread for serving

Instructions

  1. If frozen, thaw shrimp under cold running water and pat dry. Season lightly with salt and pepper.
  2. Heat a large skillet over medium-high heat. Add olive oil and 2 tablespoons butter. Melt gently without browning.
  3. Add minced garlic and sauté for about 30 seconds until fragrant, avoiding browning.
  4. Add shrimp in a single layer. Cook 1.5-2 minutes on one side, then flip and cook another 1.5-2 minutes until pink and opaque.
  5. Pour in white wine or chicken broth and lemon juice. Scrape browned bits from pan and let liquid reduce for 1-2 minutes.
  6. Stir in remaining 2 tablespoons butter until melted and sauce is silky. Add red pepper flakes if using and adjust seasoning.
  7. Toss in chopped parsley and stir for 30 seconds.
  8. Serve immediately over cooked pasta or with crusty bread.

Notes

Avoid overcooking shrimp to keep them tender. Add olive oil before butter to prevent burning. Use fresh garlic for best flavor. Deglaze pan slowly to enhance sauce flavor. Start boiling pasta water early to sync cooking times. For dairy-free, substitute butter with vegan butter or olive oil.
