Ingredients

  • Fresh bread: sourdough or rustic country loaf, sliced thick (about 1/2 inch thick)
  • Ripe avocados: mashed or sliced
  • Smoked salmon: thinly sliced, preferably wild-caught
  • Cream cheese: softened, plain or herbed (optional)
  • Capers: drained
  • Red onion: thinly sliced and soaked in cold water
  • Fresh dill and chives: finely chopped
  • Lemon wedges
  • Extra virgin olive oil: for drizzling
  • Freshly ground black pepper
  • Optional extras: sliced cucumber, radishes, everything bagel seasoning

Instructions

  1. Toast the bread slices (1/2 inch thick) in a toaster or toaster oven until golden and crisp but still soft inside, about 5-7 minutes. Alternatively, brush slices lightly with olive oil and toast in a cast iron skillet over medium heat, flipping once. Set aside on a serving platter.
  2. Cut ripe avocados in half, remove pits, and scoop flesh into a bowl. Mash gently with a fork, leaving some chunks for texture. Season with a pinch of salt and a squeeze of lemon juice.
  3. Thinly slice red onions and soak in cold water for 5 minutes to mellow the bite; drain well. Chop fresh dill and chives finely. Slice optional veggies like cucumbers or radishes. Drain capers and place in a small bowl.
  4. Arrange the toast bar on a large wooden board or platter: spread out toasted bread, place mashed avocado in a bowl with a butter knife or spreader, arrange smoked salmon slices on a plate, and place small bowls with cream cheese, onions, capers, herbs, lemon wedges, and other toppings.
  5. Drizzle extra virgin olive oil over the avocado and have freshly ground black pepper available for guests to add to taste.
