This easy hamburger potato casserole is a simple, hearty dish that combines savory ground beef and creamy baked potatoes, perfect for busy weeknights or casual gatherings.

  • 45 Russet potatoes, peeled and sliced thinly
  • 1 medium onion, finely chopped
  • 2 cloves garlic, minced
  • 1 tablespoon unsalted butter
  • 1 cup heavy cream
  • 1 cup whole milk or dairy-free alternative
  • 1½ cups freshly shredded sharp cheddar cheese
  • Salt and pepper to taste
  • 1 teaspoon smoked paprika
  • Optional toppings: fresh parsley, green onions, bacon bits

Instructions

  1. Preheat the oven to 375°F (190°C). Grease a 9×13-inch baking dish lightly with butter or non-stick spray.
  2. Heat a large skillet over medium heat. Add 1 tablespoon of butter, then sauté the chopped onion until softened, about 3-4 minutes. Add minced garlic and cook for another 30 seconds. Stir in the ground beef, breaking it up with a wooden spoon, and cook until browned. Season with salt, pepper, and smoked paprika. Drain excess grease if necessary.
  3. Peel and slice the potatoes into thin rounds (about ⅛-inch thick). Use a mandoline slicer for uniform slices if available.
  4. In a mixing bowl, whisk together 1 cup of heavy cream, 1 cup of milk, and a pinch of salt and pepper until smooth.
  5. Place a single layer of potato slices at the bottom of the prepared baking dish. Add a layer of cooked ground beef and onions, then pour some of the creamy sauce over the top. Repeat the layers until all ingredients are used, finishing with a layer of potatoes.
  6. Sprinkle 1½ cups of shredded cheddar cheese evenly over the top layer.
  7. Cover the casserole with foil and bake in the preheated oven for 35 minutes. Remove the foil and bake for an additional 10-15 minutes, or until the cheese is golden and bubbly.
  8. Allow the casserole to rest for 5-10 minutes before serving.
