  • 1 teaspoon (5 ml) ground flaxseed (optional)
  • ½ teaspoon (2.5 ml) vanilla extract (optional)

Instructions

  1. Prepare the Fruit Puree (10 minutes): Wash and hull your fruit if needed. Place fruit in a food processor or blender and puree until completely smooth. For smoother texture, strain through a fine mesh sieve to remove seeds.
  2. Mix the Ingredients (5 minutes): Transfer puree to a bowl. Stir in honey or maple syrup, lemon juice, and any optional chia seeds, flaxseed, or vanilla extract. Mix well until fully combined. Mixture should be pourable but thick.
  3. Preheat the Oven (5 minutes): Set oven to 170°F (75°C) or lowest possible setting. Line a baking sheet with a silicone mat or parchment paper.
  4. Spread the Mixture (5 minutes): Pour fruit mixture onto prepared baking sheet. Use a spatula to spread evenly in a thin, uniform layer about 1/8 inch (3 mm) thick.
  5. Bake and Dry (3-4 hours): Place sheet in oven. Dry fruit leather slowly, checking every hour after 2 hours. Done when no longer sticky but still pliable and chewy. Avoid over-drying.
  6. Cool and Cut (10 minutes): Let fruit leather cool completely on sheet. Use sharp knife or pizza cutter to slice into strips about 1 inch (2.5 cm) wide.
  7. Store Properly: Roll strips in parchment paper or plastic wrap. Store in airtight container at room temperature up to 1 week or refrigerate for longer freshness.

Use ripe, flavorful fruit for best natural sweetness. If puree is too runny, add chia seeds or ground flaxseed to thicken. Dry fruit leather at low temperature to keep chewy texture. Rotate baking sheet halfway through drying for even texture. Store rolled in parchment paper to prevent sticking. Can use a dehydrator at 135°F (57°C) for 6-8 hours as an alternative drying method.
